New Obsession

Chia Pudding! I don’t know when it started, but I have become a little obsessed with making this for breakfast. Well, that is when I remember to make it the night before. I make mine different almost every time, but the base is always the same, chia and almond milk. This specific one I made wasn’t my favorite (I put in WAY too much cinnamon), so I will give you a recipe I have done in the past.

Chia is a new obsession for everyone these days. Why it seems to be so great is because it is full of protein and fiber. Other great benefits of this seed: it is a great source of essential fatty acids (those that we can’t make in our bodies) and antioxidants. The fatty acids present in chia seeds (omega-3 and omega-6) have shown to have preventative capabilities for cardiovascular disease, while the antioxidants help to prevent damage to cells by free radicals. The ratio of omega-3 to omega-6 fatty acids are important with the former needing to be greater than the later. Chia, in the studies that have been performed, has shown to have a ratio that is beneficial to heart health. These properties go beyond basic nutrition and lump chia into the functional food category. There is still limited research on chia, but the possibility of the number of health benefits are high. Also, if you are on a gluten free diet, then chia -and this recipe- will be a great addition to your eating plan!

Cinnamon Vanilla Chia Pudding

  • 1 cup almond milk (I used sweetened vanilla but you can use unsweetened and then use a little more vanilla or maple syrup)

  • 3 tbsp chia seeds

  • 1 tsp maple syrup (could substitute with honey or agave your choice)

  • 1/4-1/2 tsp cinnamon (depending on how much you like cinnamon)

  • 1/4 tsp vanilla

  • Your choice of fruit or nuts on top

I use my Magic Bullet’s little plastic canister to make mine. I place all the ingredients in the canister and then shake really well and place in the fridge overnight. It’s super easy and tastes delicious! I haven’t gotten Kyle to try this yet. I am not sure if I will ever get him to but y’all definitely should!

Little fact and insight on me! The green glass was my Grandmother’s. She collected dish-ware, and this was some of the depression glass she collected. I love getting to have these and use them when I make things. She was a great cook (she would never say she was), and getting to have a little bit of her in my kitchen makes me feel like one day I will be able to cook and bake like her. She was an amazing woman!
